Decided to give the Spanish omelette a try with 3 eggs, 1 big onion and 2 potatoes for dinner today to accompany my pork cutlets. It is so easy to make and I must say it turned out pretty well too! Delicious! =)

Ohhh... this is one of the best dishes on earth! When I lived in Spain I used to eat one every single Thursday :)

@Zsuzsi. My Spanish friend made it for me once and I loved it! And it has all my favorite ingredients! =)
I love this dish. Potatoes and eggs, what's not to love? Mine never looks as nice as yours though.
